Gastronomy of Mexico

The gastronomy of Mexico is known for being rich in spices. Anyhow every region has its own recipes and traditional preparation, but all of them have some main ingredients and are strongly influenced by indigenous traditions, which are combined with new trends of the current gastronomy.

We find also influences of the Spanish colonial era in the dishes of the Mexican cuisine, when meats such as pork where included as a main element of the Mexican cuisine.

The corn is one of the main basic ingredients besides rice, cereals and vegetables (pepper and tomato).

Some traditional dishes:

"Guacamole" mashed avocado a specialty of the Mexican cuisine and international known. Characteristic for its flavour and simplicity of preparation. Besides the "guacamole" one of the most popular dishes "the tacos" that can be prepared with different ingredients as for example with veal and cheese. The "enchilada" a kind of tortilla with meet or cheese filling, served with tomato and chili sauce.

All of these dishes are internationally known thanks to the high expansion and presence of the Mexican gastronomy in almost all countries worldwide.

Among the most popular beverages, the tequila is without doubt one of the most traditional alcoholic beverages. The "Tepache", made out of different fruits: pineapple, apple or orange mixed with the "el piloncillo" a brown sugar candy that is obtained from the sugar-cane and sometimes beer. At Christmas the Mexican punch is a common beverage. Its main ingredients are sugar-cane, apple and hibiscus. The Tuba is a non-alcoholic beverage and its main ingredients are the coconut mixed usually with cucumber and fruits.
