The gastronomy of New Caledonia takes multiple influences of the best French food, mixed with the products as the shellfish of its own coast and the local dishes of the Melanesian people.
It is a light cuisine based mainly on natural products such as vegetables and fruits.
The traditional dish is known as Bougna and its a combination of fish, vegetables, pork, fruits and coconut milk. The coconut is one of the basic ingredients in all dishes of the New Caledonian cuisine.
Other local dishes of the gastronomy of New Caledonia are dishes combined with shark, lobster or shrimps served with different vegetables of own production.
Its tropical climate provides the island with different juicy tropical fruits such as pine-apple, avocados, melons and of course the coconut.
Mostly all dishes are accompanied with wine or beer. Also coffee is very popular, which is also cultivated in the country.
