Gastronomy in Peru

Due to the diversity of influences reaching from Inca traditions to influences from several countries of Europe an Asia, the Peruvian gastronomy is considered one of the most diverse in the world. Traditions of the Inca civilization are mixed with influences of Spanish, French, Italian, Chinese and Japanese cuisine among others.

One of the main ingredients are different kinds of fish and local vegetables as well as rice.

The national dish is the "Ceviche" made of different kinds of fish or seafood, onion and chili pepper. Mainly served with local vegetables. Another traditional and very popular dish is the "Papas a la Huancaina" (potatoes dish). Mainly prepared with boiled potatoes cut in slices and served with a spicy cheese sauce.

Over 250 different desserts form part of the Peruvian gastronomy. One of the most popular is the rice-pudding (arroz con leche) which is also a main dessert in different countries in South America. A typical dessert during festivities is the turrón (nougat) made commonly from almonds.

Most common soft drinks is the Chicha Morada a beverage of fruity taste and prepared from maiz, pineapple sugar. The gaseosa, a popular soda drink is the Inca Kola, sweet and refreshing and is served almost with every dish.
