The gastronomy of Spain is popular for its variety and it is different from region to region. Known worldwide as the Mediterranean diet recommended for prevention of many diseases and keep health, rich in natural ingredients of all types.
One of the most popular dishes of the Spanish cuisine is the "Paella" which consists in rice mixed with fish or meat or vegetables, traditional in the region of Valencia, although it is a typical plate that is served throughout the country.
The Spanish potato omelette "Tortilla", easy to prepare and main dish on Spanish tables and in restaurants.
Very typical for the Andalusian region is the "Gazpacho" a refreshing cold tomato based soup with raw vegetables. Usually consumed during the summer time. In this part of Spain the fish dishes are very popular and fish is often served on a big plate with different kinds of fried fish peaces, accompanied by fried potatoes.
The northern regions are popular for the quality of fish and meats, famous for stews and soups. A typical dish in Asturia is the "Fabada Asturiana", a bean pot with cured sausages and salt pork, mainly a traditional dish during the cold winters. Galicia is known for its traditional fish dishes. The "Pulpo a la Gallega", consisting in boiled octopus slices spiced with paprika, salt and olive oil. The cuisine in Galicia includes many different fish dishes prepared in different ways.
Desserts are very popular after meals in Spain. A specialty and very traditional during Christmas is the "Turrón" (nougat with almonds). Cheese covered with honey and nuts, a traditional sweet, of the northern regions "Requesón". Each region in Spain has its own typical plate and dessert, reason for the diversity of the Spanish gastronomy.
Wine is the main beverage served with meat and fish dishes. Spain is one of the most important exporters of wine, specially for those of the area of "La Rioja". Beer is also a very popular beverage served usually with the famous Spanish tapas and also a social drink. "Sidra" typical and traditional in Austurias and not to forget the excellent "Cava" (the champagne of Spain) of the Catalan regions.
